How To Preserve Fresh Taste of Summer


Have you thought of canning? Given the current economic environment, It's a very practical way to preserve the fresh taste of summer produce. And it's surprisingly easy and safe. In fact, tomatoes are one of the safest fruits or vegetables to can using the easy "boiling water bath" method because they are so acidic. You don't even need any fancy equipment - just Mason jars, lids, and a big pot. We use an old lobster pot!

Head to the farmers' market at the end of August or early September when there are still plenty of fresh, in-season, delicious tomatoes. Buy a whole box, which is usually around ten pounds. We use a family friend's old canning guide from the 70's, but you can find instructions online from sources such as the USDA. It's very time-intensive, but it's a great way to spend quality time in the kitchen with girlfriends or family. You'll have the best-tasting canned tomatoes all winter - and unique holiday gifts!
