Nutrition Month 2009:
How To Bring On A Fun Dinner With Whole Grains

Corn tortillas are a whole grain and a wonderful snack. Try turning whole grain tortillas into a wonderful, easy snack or dinner. Start by making your own tortilla chips: Pre-heat your oven to 400 degrees. Take six inch tortillas and cut them into six pie-shaped pieces. Spray with cooking spray and bake in the oven for 5 minutes or until golden brown. Serve with a nutritional powerhouse of a salsa called "Southwest Salsa": Combine 1 cup chopped tomatoes, 1/4 cup chopped red onions, 1 cup black beans, 1/2 cup corn, 2 tablespoons of lime juice, 2 tablespoons of olive oil and fresh cilantro.

You can make the salsa ahead of time and store in the frig for up to five days. Make the chips in minutes and have "dinner" on the table in no time. Great nutrition never tasted so good!
