Nutrition Month 2010:
How to Put Together An Easy Vegetable Broth


Prepare vegetables for dinner. When cleaning up all scraps, add these unwanted vegetable trimmings (e.g. carrot tops, mushroom stems, broccoli stalks, etc.) into a bag in freezer. When bag is full, fill large pot with 8 cups water. Add frozen vegetable trimmings, bay leaf, peppercorn, salt, garlic and simmer. Drain in colander. Use immediately for soup, or store for later use, such as steaming or stir-frying. Use up within one week.
