Nutrition Month 2010:
How to Fool Your Taste Bud


I reduce the fat, sugar and salt in a lot of my recipes. To compensate and fool the taste buds, I often put fat, salt and sugar on top of foods.

For example, I'll make low-fat blueberry muffins and top them with Demerara sugar or I'll saute Brussels sprouts in olive oil and top with sea salt, Parmesan cheese and crispy bacon. The sweet or salty flavors hit your palate immediately, fooling you into thinking your food is richer than it is.
