This year, Feb 7 marks the beginning of Chinese New Year. When we think of Chinese cuisine, we often think of sweet & sour pork and fried rice - dishes that are not necessarily heart healthy. Joining me today is world renowned celebrity chef Martin Yan - host of over 2000 cooking shows and author of 26 cookbooks. He says Chinese cuisine has a lot more to offer than just deep fried spring rolls.

I totally agree with what you were saying. I personally like to eat white rice and broccoli shrimp in garlic sauce or mixed white rice.

I appreciate learning about the Chinese culture and cuisine. It was interesting learning about the value placed on "round" things (eg mushrooms) and orange/gold colored things. It's true that the menus in Chinese restaurants have alot of variety - I just never noticed it before. Also, the incorporation and primary use of fruit (eg orange beef) was very inspiring. I would like to know more about the seasonings and sauces that make Chinese cuisine so delicious. Are whole grains utilized at all in Chinese cooking?
