Parsnip Recipe:
Parsnip Tuna Burgers
Recipe:
- Makes: 8 servings
- Prep. Time: 20 minutes
- Cooking Time: 7-9 minutes
Ingredients:
- 2 large parsnips, cooked until soft
- 2 egg whites, lightly beaten
- 3 tsp. fresh chopped parsley or 1 tsp. dried parsley flakes
- 2 tsp. fresh lemon juice
- ½ tsp. lemon zest
- ½ tsp. dried dill weed
- ¼ tsp. pepper
- 2 6-oz. cans water-packed tuna, drained
- 1 ½ Tbsp. olive oil
Steps:
- Mash parsnips.
- In a bowl, combine all ingredients except olive oil.
- Form into 8 burgers.
- Cook in olive oil over medium heat in a large skillet until lightly browned on one side, about 4-5 minutes.
- Flip burgers. Continue cooking until browned on the other side, about 3-4 minutes.
