Peach Recipe - Panini AB & P (almond butter and peach toastie)
Peanut butter and jelly is something nearly every kid enjoys. (Little do they realize that it’s a vegetarian sandwich!) But when you grow up, it’s time to take it to the next level—at least some of the time. So make the culinary upgrade to almond butter instead of plain peanut, whole grain or flaxseed bread instead of mushy white, and fresh seasonal peach instead of super sweet jelly. It’ll bring back school-day memories—and create new ones, too.

Ingredients
- 1/2 cup natural almond butter*
- 8 slices whole grain or flaxseed bread
- 1 large peach, pitted and very thinly sliced
Steps:
- Spread 1 tablespoon of the almond butter on each bread slice. Top four of the slices with the peach. Top with the remaining bread slices, almond butter side down. Spray the sandwich with homemade cooking spray.**
- Heat a panini grill to medium-high heat. Place each sandwich in the grill. (Cook in batches, if necessary.) Cook until lightly toasted, about 2 1/2 minutes. (Alternatively, pan-toast each sandwich in a preheated skillet or grill-pan over medium-high heat until lightly toasted on the bottom, about 1 1/2 minutes; then flip, turn off the heat, and cook while the burner is off until lightly toasted, about more 1 1/2 minutes.)
- Slice toasties in half diagonally and serve immediately.
Per serving: 380 calories, 22g total fat, 2.5g saturated fat, 0g trans fat, 0mg cholesterol, 260mg sodium, 37g total carbohydrate, 6g dietary fiber, 13g protein
*Add a pinch of sea salt if using unsalted almond butter to brighten the peach flavor.
**Fill a Misto or similar spray bottle with oil of choice.
