Persimmon Recipe:
Double Bran Persimmon Muffins
Ingredients:
1 cup wheat bran
1 cup oat bran
1 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup persimmon pulp
1/2 cup skim milk
2 egg whites, lightly beaten
2 tbs olive oil
2 tbs honey
Steps:
Preheat oven to 400 degrees F. Line a 12 cup muffin tin with paper liners. In a large bowl, combine, wheat and oat brans, whole wheat flour, baking powder, baking soda, cinnamon and nutmeg.
In another bowl, combine persimmon, milk, egg whites and oil. Pour wet ingredients into dry ingredients and mix until just combined. Scoop by 1/4 cupfuls into prepared muffin cups.
Bake 14 to 16 minutes or until toothpick stuck in middle is sticky but not wet.
