Pickled Rhubarb

Rhubarb Recipe - Pickled RhubarbIngredients

  • 1QT cider vinegar
  • 1 QT water
  • 1/2 QT sugar
  • pinch of salt
  • 5 slices of ginger
  • 2 dried Thai chilis
  • 2 tbsp toasted coriander seeds
  • 1 bunch of rhubarb

Steps:

Cut rhubarb into 6 inch long by 1/4 inch wide sections and place in a glass or stainless steel container with the ginger. Bring the liquid with salt and sugar mixture to a boil then pour over rhubarb and ginger. Cover and let sit at room temperature for 30-45 minutes. Refrigerate for an hour, serve and enjoy.
