I was so impressed with Dr La Puma's conversation around omega-3 fatty acids and Vitamin D and depression that I have already forwarded this link to a close friend of mine-great info and nice having a transcript version...

Wow, good to know that when I pizza at a higher temperature (which I already do), it's actually giving me more antioxidants! So does anyone know the best way to store watermelon to increase it's beta-carotene & lycopene levels? Wish Dr La Puma would have given more information on that. Interesting stuff.

Hi Luke, If you join ChefMD that very question is addressed, it is also addressed in this podcast/transcript, and the simple answer is store your watermelon on the kitchen shelf to double the antioxidants. This is, once again great information, and I think a wise decision would be to join his website ChefMD for a dearth of information, I have just joined and had it confirmed.

Hi John Bobbin BNat, Thanks for the heads up, I will have to check out ChefMD's site when I get a chance. So when you say storing it on the kitchen shelf to increase antioxidants, does that mean as opposed to storing it in the refrigerator? If so, I wonder if that is true for other fruits as well. Interesting. Dr La Puma should come here and reply :)

Nice discussion guys! We've actually published an article about watermelon and lycopene back in June 2006. Check it out here http://www.healthcastle.com/lycopene_watermelon.shtml

Thank you Gloria for sharing your article. It answered my question. Glad to see both you and Dr La Puma having the same recommendation. I will be sure to keep storing watermelon on my kitchen counter!
